Alliance Marmalade

Alliance marmalade is a classic Danish mixed jam that combines redcurrants, cherries, blackcurrants and raspberries into a preserve with a broad, tart flavour. The name refers to the alliance of berries — typically whatever is ripe at harvest — cooked together.
Ingredients
Makes ca. 6–7 jars
- 1/2 kg redcurrants, stripped from stems
- 1/2 kg cherries, pitted
- 1/4 kg blackcurrants
- 1/2 dl lemon juice
- 8–9 dl sugar
- 1 1/2 punnets raspberries (approx. 225 g)
- 1 packet jam pectin powder
Method
Preparation
Rinse and strip the redcurrants, pit the cherries and rinse the blackcurrants.
First cook
Combine the redcurrants, cherries and blackcurrants with the lemon juice in a pot and heat slowly with the lid on. Remove the lid and stir so the berries on the bottom come up. Add the sugar — reserving 2 tbsp for the pectin powder. Cook the jam for 10 minutes.
Raspberries
Add the raspberries and cook for another 5 minutes.
Pectin powder
Mix the reserved 2 tbsp sugar with the pectin powder. Sprinkle the mixture into the jam a little at a time, stirring constantly. Cook for 2 minutes.
Finishing
Skim the jam and pour into clean, scalded jars. Seal immediately.
Notes
- “Punnets” in the ingredient list refers to standard 150 g berry punnets — 1½ punnets equals about 225 g raspberries
- Jam pectin powder helps the jam set quickly — it can be left out, but requires a longer cooking time
- The proportions can be varied freely depending on what is available — the classic ratio is 1/3 redcurrants, 1/3 blackcurrants, 1/3 raspberries
- Store in a cool place; shelf life 6 months unopened
