Ginger Sauce (Sốt gừng)

A more complex ginger sauce than the ginger dressing, thanks to kumquat juice and pounded chilli-garlic alongside the ginger. The kumquat adds a floral citrus note you don’t get from lime alone. This is a good dipping sauce for grilled or fried dishes.
Ingredients
- 1 tsp lime juice
- 1 tbsp kumquat juice
- 1 tbsp sugar
- 2 tbsp fish sauce
- 1 tbsp ginger, pounded
- 1 tbsp mild red chilli and garlic, pounded
Directions
- Combine the lime juice, kumquat juice, sugar, fish sauce, pounded ginger, and pounded chilli and garlic in a small bowl. Stir until the sugar dissolves and everything is well mixed.
Notes
- Kumquat juice gives this a distinctive citrus flavour. If you can’t find kumquats, extra lime juice works but the result will be sharper and less floral.
- Good with fried spring rolls or grilled pork.
