The most basic Thai table condiment – sliced fresh chillies steeped in fish sauce, with optional lime juice and garlic. Found on every table in Thailand, used to adjust the seasoning of any dish. At its simplest, it is just fish sauce and chillies. Everything else is optional.
Makes ca. 100 ml
Ingredients
- 4 tbsp fish sauce
- 1-2 tbsp fresh lime juice (optional)
- 4-5 Thai bird’s eye chillies, thinly sliced
- 2 garlic cloves, thinly sliced (optional)
Directions
Slice the chillies and garlic (if using) thinly. Combine fish sauce and lime juice (if using) in a small bowl or condiment dish. Add sliced chillies and garlic.
Let sit for at least 10 minutes before serving to let the chili flavor infuse.
Notes
The simplest version is just fish sauce and sliced chillies. Lime juice, garlic, and shallots are all optional additions.
For a batch version: fill a jar with minced chillies and fish sauce. Keeps indefinitely in the fridge – just top up with more fish sauce or fresh chillies as needed.
Fish sauce to lime ratio is typically 3:1 to 4:1, favoring the fish sauce.
