Air Fryer Beef Taquitos
Taquitos are corn tortillas rolled tight around a seasoned filling and fried until the shell turns hard and crisp. This version skips the deep-fryer: the rolls get a light coat of oil and go into the air fryer instead, which gets them most of the way to that same crunch with a fraction of the oil and none of the splatter.
The filling is ground beef browned with onion and garlic, then built up with tomato paste, chili powder, cumin, oregano and minced chipotle in adobo. The chipotle is what lifts this out of packet-seasoning territory — it brings a smoky heat that plain chili powder doesn’t, and it’s the one ingredient worth not skipping. Shredded cheese goes in with the meat, not just on top, so it melts through the roll and helps the seam hold shut.
Corn tortillas are the right call here — they’re what makes a taquito a taquito, as opposed to a flauta, which is the flour-tortilla version. Corn tortillas crack if you roll them cold, so they get a quick steam under a damp paper towel first, just enough to make them pliable.
Taquitos are a Tex-Mex staple, sold everywhere from gas-station roller grills to sit-down restaurants, and they’re built for exactly this kind of hands-on eating: a stack of them on a plate with bowls of salsa, sour cream, guacamole and pico de gallo alongside for dipping, and lime wedges to squeeze over the top.
Ingredients
Serves 5 (about 14 taquitos)
The filling
- 1 tbsp neutral oil
- ½ onion, finely diced (about 75 g)
- 2-3 garlic cloves, minced
- 454 g ground beef
- 1 tbsp tomato paste
- 1-2 chipotle peppers in adobo sauce, minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- ½ tsp dried oregano
- 1 tsp fine salt, plus more to taste
- ¼ tsp black pepper
- 60 ml water
To assemble
- 140 g shredded cheese (Mexican blend, pepper jack, or cheddar)
- 14 corn tortillas (15 cm)
- oil spray (olive or avocado), for the taquitos

Directions
The filling
Heat the oil in a large skillet over medium-high heat. Add the onion and garlic and sauté for about 3 minutes, until softened.
Add the ground beef and cook for about 8 minutes, breaking it up into small crumbles as it browns. Drain off any excess fat.
Stir in the tomato paste, chipotle, chili powder, cumin, oregano, salt, pepper and water. Simmer for about 3 minutes, until the mixture has thickened and most of the liquid has cooked away. Taste and adjust the salt, then pull the pan off the heat and let the filling cool slightly.
To assemble
Soften the tortillas so they roll without cracking: wrap them in a damp paper towel and microwave for 30-60 seconds, or warm each one in a dry skillet for a few seconds per side. Keep them covered so they stay pliable while you work.
Heat the air fryer to 400°F (204°C).
Working one tortilla at a time, spoon about 2 tbsp of filling along one edge, scatter a little cheese over it, and roll it up tightly into a tube. Set it seam-side down so the roll stays closed; use a toothpick to secure it if it wants to spring open.
Arrange the taquitos seam-side down in a single layer in the air fryer basket, leaving space between them so they aren’t touching. Spray them lightly with oil on all sides.
Air-fry for 8-10 minutes, flipping the taquitos gently halfway through and re-spraying any spots that look dry, until they’re golden and crisp all over.
To serve
Pull out any toothpicks and let the taquitos cool for a minute or two before serving hot, with salsa, sour cream, guacamole, pico de gallo and lime wedges alongside.
Notes
Putting cheese inside the roll rather than just on top isn’t optional — it melts and helps glue the seam shut as the taquito cooks.
Work in batches instead of crowding the basket. Too many taquitos packed in together will steam rather than crisp.
Leftovers reheat well: 4-5 minutes at 350°F (177°C) in the air fryer brings the crunch back.
Ground beef can be swapped for shredded cooked chicken, beef, or pork if that’s what’s on hand.
