Air Fryer Broccoli
Broccoli florets tossed in olive oil, garlic and salt, then air-fried until the edges char and the stems turn tender. It is a fast side dish with almost no cleanup: one bowl for tossing, one basket for cooking.
The method is simple but a couple of details decide the result. Cut the florets large and roughly the same size so they cook evenly, and dry them well before oiling – wet broccoli steams instead of browning. Do not crowd the basket: a single layer with space between the pieces is what gives crisp, browned edges. Packed in too tight, the broccoli just turns soft. Cook in batches if the air fryer is small.
Garlic powder is the easiest way to season it, since it will not burn during the cook. Fresh garlic gives more punch but scorches at this heat, so if using it, stir it in for only the last few minutes or drop the temperature a little.
Serve it straight from the basket while the edges are still crisp. It works alongside roast chicken, grilled fish, steak, or a bowl of rice – anywhere a fast, low-effort vegetable side is welcome.

- 450 g broccoli florets, cut into large, even pieces
- 2 tbsp olive oil
- 1/2 tsp garlic powder (or 2-3 cloves garlic, minced)
- 1/2 tsp fine salt (or 3/4 tsp kosher salt)
- 1/4 tsp black pepper, freshly ground
- 1 pinch sugar, optional (for caramelization)
- 2 tbsp water, optional (for the drawer, to tenderize)
- Parmesan, grated, optional (for topping)
- lemon juice or zest, optional (for topping)
- red pepper flakes, optional (for topping)
- sesame seeds, optional (for topping)
Directions
Pat the broccoli dry and cut it into large, even florets. Similarly sized pieces cook at the same rate, and dry surfaces brown better than damp ones.
In a large bowl, toss the florets with the olive oil, garlic powder, salt, pepper, and the sugar if using, until every piece is coated and there are no dry spots left.
Preheat the air fryer to 400°F (204°C). For a more tender interior, add 2 tbsp water to the bottom of the drawer just before cooking – it will hiss on contact.
Arrange the broccoli in a single layer with space between the pieces. Work in batches rather than crowding the basket; a crowded basket steams the broccoli instead of crisping it.
Air fry for 8-10 minutes, shaking or flipping the basket halfway through, until the edges are browned and crisp and the stems are fork-tender.
Serve immediately, finishing with any of the optional toppings: grated Parmesan, a squeeze of lemon, red pepper flakes, or sesame seeds.
Notes
- Do not crowd the basket. This is the most-cited rule across recipes – a crowded basket steams the broccoli instead of crisping it. If the air fryer is small, cook in two batches.
- Fresh garlic burns at this temperature. Garlic powder is the hands-off choice. For fresh garlic, drop the heat, add the drawer water, or stir it in for only the last 2-3 minutes.
- Frozen broccoli works too – do not thaw it first. Add 2-5 minutes to the cook time and expect softer edges, since the extra moisture works against crisping.
- For gentler browning, drop the temperature to 350-370°F (177-188°C).
- For a savory, soy-glazed version, swap some of the salt for 1 tbsp tamari.
- Leftovers keep in the fridge for 3-5 days. Reheat in the air fryer at 350°F (177°C) to re-crisp – the microwave leaves it soggy.
