Air Fryer Brussels Sprouts
Air fryer Brussels sprouts are trimmed sprouts halved lengthwise, tossed with olive oil, garlic powder, salt and pepper, and air fried in a single layer until the cut edges are deeply browned and crisp. The whole thing takes well under twenty minutes and needs almost no attention beyond one shake of the basket.
The method is simple and forgiving. Cutting the sprouts in half exposes flat faces that catch the dry heat directly, so laying them cut-side down in an uncrowded basket is what gets the char — stack them or crowd the basket and they steam instead of crisping. A shake halfway through cooking browns both sides evenly.
Done right, the outer leaves turn crisp and browned, almost charred at the edges, while the centers stay tender. Pull them as soon as the edges are crispy and browned rather than black — sprouts left too long turn bitter and sulfurous, which is the main way this dish goes wrong.
This isn’t a heritage recipe with a long history behind it — it’s a modern air-fryer method built around one core idea: high, direct dry heat on the cut face. From that plain base, a finish can be added right at the end: a drizzle of balsamic glaze, a spoonful of hot honey, or a scattering of Parmesan. Any of the three turns the same side dish sweeter, sharper, or richer without changing the technique.
Serve them straight from the basket alongside roasted or grilled meat, as part of a bigger vegetable spread, or as a fast weeknight side when time is short.

- 454 g Brussels sprouts, trimmed and halved lengthwise
- 1 tbsp olive oil
- ½ tsp garlic powder
- ½ tsp fine salt
- ¼ tsp black pepper, freshly ground
- 1 tbsp balsamic glaze, for a balsamic finish (optional)
- 2 tbsp honey, for a hot-honey finish (optional)
- 1 tsp crushed red pepper flakes, for a hot-honey finish (optional)
- 3 tbsp Parmesan, finely grated, for a Parmesan finish (optional)
Directions
Trim the stem end off each Brussels sprout and pull away any loose or discolored outer leaves. Halve the sprouts lengthwise through the core; leave very small ones whole and quarter any large ones so every piece ends up roughly the same size.
Put the sprouts in a bowl with the olive oil, garlic powder, salt and pepper, and toss until evenly coated.
Preheat the air fryer to 375°F (190°C) for a few minutes. Load the sprouts into the basket in a single layer, cut-side down, leaving space around each piece — cook in two batches if they don’t fit without crowding.
Air fry for 10–12 minutes, shaking the basket once around the halfway point, until the sprouts are deeply browned and crisp at the cut edges.
Tip the sprouts into a serving bowl. Finish as you like: drizzle with balsamic glaze, toss with warm hot honey (honey and crushed red pepper flakes warmed together), or toss with the grated Parmesan. Serve right away while hot.
Notes
For extra-crispy sprouts, use up to 2 tbsp oil and raise the temperature to 400°F (204°C), cooking in two phases: 12–14 minutes, then a shake and a light respray of oil, followed by another 8–10 minutes.
For softer centers, soak the halved sprouts in warm water for 10 minutes and pat them dry before tossing with the oil, or cook at a slightly lower temperature.
Fresh sliced garlic can stand in for the garlic powder — add it in the last 2–4 minutes of cooking so it doesn’t scorch.
A balsamic or honey glaze can also be tossed in before cooking so it caramelizes on the sprouts, but watch closely, since the sugars brown fast.
Don’t let the sprouts go past crispy-charred to black — overcooked sprouts turn bitter and sulfurous.
