Air Fryer Carrots
Air fryer carrots are whole carrots peeled, cut into even pieces, tossed with olive oil and salt, and cooked hot until the outside caramelizes and the inside turns tender. There’s no oven preheat and barely any hands-on time, which makes it an easy side dish on a weeknight.
The method is simple but the details matter. Cutting the carrots into similar-sized pieces keeps them cooking at the same rate, and the thin tapered tips are worth trimming off since they burn before the thicker parts are done. A single layer in the basket, with a shake partway through, is what turns plain steamed carrots into ones with browned, caramelized edges.
Plain, the carrots are just oil, salt, and pepper, but an optional honey-garlic glaze dresses them up. Honey scorches fast under the heat of an air fryer, so the glaze goes on partway through cooking rather than at the start, giving it just long enough to caramelize without burning.
This is a side dish, good next to roast chicken, grilled meat, or fish, and quick enough to make while the main course rests.

The carrots
- 450 g carrots (about 6 medium), peeled and cut into even 5 cm pieces or 1 cm diagonal slices
- 1 tbsp extra-virgin olive oil
- ½ tsp fine salt
- ¼ tsp ground black pepper
- 1 tbsp fresh thyme, rosemary, or parsley, chopped (optional, for serving)
The honey-garlic glaze
- 30 g honey
- 14 g unsalted butter, melted
- 2 garlic cloves, minced
Directions
The carrots
Peel the carrots and trim off the thin tapered tips — they scorch before the thicker parts are tender. Cut the carrots into even pieces, roughly 5 cm (2 in) chunks or diagonal slices about 1 cm (½ in) thick. If any carrot is noticeably thicker than the rest, halve or quarter it lengthwise first so every piece finishes cooking at the same time.
Toss the carrots in a bowl with the olive oil, salt, and pepper until evenly coated.
Spread the carrots in a single layer in the air fryer basket. Pieces can touch but shouldn’t overlap or stack — crowding the basket steams the carrots instead of letting them caramelize. Cook in two batches if the basket is small.
Air fry at 375°F (190°C) for 12–15 minutes, shaking the basket once around the halfway point. Smaller pieces cook faster, closer to 10 minutes, so start checking at the 8-minute mark if you’ve cut things small. The carrots are ready when a fork slides in easily and the edges are caramelized.
The honey-garlic glaze
For the honey-garlic glaze, whisk the melted butter, honey, and minced garlic together while the carrots cook. At the halfway shake, tip the carrots back into the bowl, toss them in the glaze, then return them to the basket for another 6–8 minutes so the honey caramelizes instead of scorching — it burns quickly if it sits in the heat too long.
To serve
Taste and adjust the salt, scatter with the fresh herbs if using, and serve warm.
Notes
For a savory version, skip the honey glaze. Instead, toss the raw carrots with 2 tbsp olive oil, 2 tbsp grated parmesan, 1 tsp Italian seasoning, and ½ tsp garlic powder before air-frying.
Preheating the air fryer isn’t necessary, but a 3–5 minute preheat gives a slightly better sear.
Refrigerate leftovers airtight for up to 4 days. Reheat in the air fryer at 360–375°F (182–190°C) for 1–2 minutes to re-crisp, or freeze for up to 3 months.
