Air Fryer Chicken Breast
Air fryer chicken breast is a boneless, skinless breast rubbed with a simple paprika-and-garlic spice blend, coated lightly in oil, and cooked in an air fryer until just done. The circulating hot air browns the outside much the way an oven or a pan would, only faster, and without heating up a whole oven for one piece of meat.
The main risk with a lean cut like this is overcooking it into something dry and stringy, so most of the technique is really about avoiding that. Pounding the thicker end down to an even thickness keeps the whole breast cooking at the same rate, so the thin tail doesn’t dry out before the thick end is done. A short brine, wet or dry, helps the meat hold on to more moisture, though it’s optional if you’re short on time.
The cooking itself is quick: coat the meat in oil, rub on the spice mix, then air fry at 400°F (204°C) for 10 to 13 minutes, flipping once. What matters more than the clock is the thermometer — pull the chicken at around 160°F (71°C) and let it rest for five minutes; carryover heat brings it up to a safe 165°F (74°C) without drying out the surface. The result is a breast with a browned, spiced crust and a tender interior, ready to slice.
It works as a straightforward weeknight main alongside rice, potatoes or a salad, and it slices well for meal prep — into sandwiches, wraps or a batch of grain bowls to eat through the week.
Ingredients

- 4 boneless, skinless chicken breasts, about 200 g each
- 1 tbsp olive oil
- 1 tsp fine sea salt (less if brining — see notes)
- 1 tsp paprika (sweet; or use ½ tsp smoked paprika)
- 1 tsp garlic powder
- ½ tsp onion powder
- ¼ tsp black pepper
- pinch of cayenne pepper, or ¼ tsp dried thyme or oregano (optional)
Directions
If the breasts are uneven in thickness, cover them with plastic wrap and pound the thicker end down until each one is about ½–¾ inch (1.5–2 cm) thick throughout. This isn’t strictly necessary, but it keeps thin ends from drying out before the thick middle is cooked through.
Pat the chicken completely dry with paper towels — a dry surface browns much better than a damp one. If you brined the chicken first, rinse off any wet brine and dry it just as thoroughly.
In a small bowl, stir together the salt, paprika, garlic powder, onion powder and black pepper — add the cayenne or dried herbs here too, if using. Rub the chicken all over with the olive oil, then coat both sides evenly with the spice mix.
Arrange the breasts smooth-side down in the air fryer basket in a single layer, leaving space around each piece so air can circulate. Air fry at 400°F (204°C) for 10 to 13 minutes, flipping once halfway through. For very thick breasts, drop the temperature to 375°F (190°C) so the outside doesn’t finish before the inside does.
Check for doneness with an instant-read thermometer in the thickest part, and pull the chicken once it reads about 160°F (71°C).
Transfer the chicken to a plate, tent loosely with foil, and let it rest for 5 minutes. The internal temperature climbs to a safe 165°F (74°C) as it rests, and the juices settle back into the meat instead of running out onto the cutting board. Slice and serve.
Notes
Brining is optional but helps keep the chicken moist. For a wet brine, dissolve ¼ cup (72 g) salt in 4 cups (1 L) water and submerge the breasts for 15 minutes up to an hour, refrigerated for the longer end, then rinse and dry well before seasoning. For a dry brine, rub about ½ tsp salt over the surface and let the chicken sit uncovered in the fridge for 30 minutes up to overnight. Either way, cut back on or skip the salt in the rub so the finished chicken isn’t over-salted.
Cooking time depends on the size of the breast more than anything else: small (5–6 oz) breasts take about 8–10 minutes, medium (7–8 oz) about 10–12 minutes, and large (9 oz+) about 12–16 minutes. Flip halfway regardless of size, and rely on the thermometer rather than the clock.
Don’t skip the rest before slicing. Cutting into the chicken right away lets the juices run out instead of redistributing.
From frozen, air fry at 360°F (182°C) for 18–20 minutes, flipping halfway. Brining isn’t possible with frozen chicken, so lean even more on the thermometer.
Preheating the air fryer isn’t required. Skipping it adds a minute or two to the cook time but keeps the surface from drying out before the inside cooks through.
