Air Fryer Chicken Drumsticks
Bone-in, skin-on chicken drumsticks, tossed in a light coat of oil and a dry rub, then air-fried until the skin turns deep golden and crackly. It’s a weeknight method, not a traditional recipe, but it consistently gets a good texture: crisp skin, tender dark meat, none of the mess of deep-frying.
The rub is a simple base of smoked paprika, garlic powder, onion powder, salt, and pepper, with a pinch of cayenne if you want more heat. Add a tablespoon of brown sugar for a sweeter, more caramelized crust — the two versions taste different enough to count as separate options, not just a scaling change.
Dark meat can take more heat than a chicken breast without drying out. Cooking past the 165°F (74°C) food-safety minimum, up to around 175–185°F (80–85°C), renders more of the fat and connective tissue, so the meat pulls cleanly off the bone instead of turning rubbery.
Good on their own with a squeeze of lime, dunked in ranch or blue cheese dressing, or brushed with barbecue sauce for the last few minutes of cooking.
Ingredients
Serves 4
- 8 bone-in, skin-on chicken drumsticks (about 900 g)
- 1½ tbsp olive oil
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ¾ tsp fine salt (or 1 tsp kosher salt)
- ½ tsp black pepper, freshly ground
- ¼ tsp cayenne pepper (optional)
- 1 tbsp brown sugar (optional, for a sweet-smoky version)
Directions
Pat the drumsticks completely dry with paper towels. Dry skin is what crisps up in the air fryer, so don’t skip this step.
In a small bowl, mix the smoked paprika, garlic powder, onion powder, salt, pepper, and cayenne. Stir in the brown sugar too if you’re making the sweet-smoky version.
Put the drumsticks in a large bowl, drizzle with the olive oil, and toss until coated. Sprinkle the spice mix over and toss again until every drumstick is evenly covered.
Preheat the air fryer to 400°F (204°C), about 5 minutes. Arrange the drumsticks in a single layer in the basket, leaving space between them so air can circulate.
Air fry for 12 minutes, then flip each drumstick and cook for a further 8–12 minutes, until the skin is deep golden and a thermometer inserted into the thickest part, avoiding the bone, reads 175–185°F (80–85°C). Dark meat is more tender well past the 165°F (74°C) food-safety minimum.
Let the drumsticks rest for 5 minutes before serving.
Notes
For extra-crispy skin with more time to render the fat, drop the temperature to 380°F (193°C) and cook for about 25–30 minutes total, flipping at the 15-minute mark.
Don’t overcrowd the basket. Cook in batches if your air fryer is small, so hot air can circulate around each piece.
If using the brown sugar version, watch closely in the final few minutes — sugar can scorch at 400°F (204°C).
For a barbecue finish, cook plain for about 15 minutes, brush with barbecue sauce, then finish for the last 5 minutes.
Add hot sauce after cooking, not before — it burns onto the basket at these temperatures.
