Air Fryer Greek Chicken
This is the same lemon, garlic and oregano marinade behind Greek souvlaki, cooked indoors in an air fryer instead of on skewers over coals. Boneless chicken thighs sit in olive oil, lemon juice and zest, garlic and plenty of dried oregano, then go into the basket in a single layer until golden and lightly charred at the edges.
Dried oregano is what makes this taste Greek rather than generically Mediterranean - it goes in heavier than you’d expect, and dried is the right form here, not fresh. A spoonful of red wine vinegar sharpens the lemon, and sweet paprika gives the edges their colour as they char.
Thighs are the better cut for this method: they stay juicy under the air fryer’s dry heat, where breast can dry out fast. Cubing the chicken before marinating means more surface area for the marinade and a faster, more even cook - and it also means the dish works equally well as a filling for warm pita or spooned over a grain bowl.
Serve it the way you’d serve souvlaki: warm pita and tzatziki, with a Greek salad, crumbled feta, kalamata olives, sliced red onion and tomato alongside. It keeps and reheats well, so it’s worth making extra for lunches through the week.

The chicken
- 800 g boneless, skinless chicken thighs, cut into 4 cm chunks
The marinade
- 45 ml extra-virgin olive oil
- 45 ml fresh lemon juice (about 1 large lemon)
- 1 lemon, finely grated zest of
- 1 tbsp red wine vinegar
- 3-4 garlic cloves (about 15-20 g), finely minced
- 1 tbsp dried oregano
- 1 tsp sweet paprika
- 1½ tsp fine salt
- ½ tsp freshly ground black pepper
To serve
- pita bread, warm, for serving
- tzatziki, for serving
Directions
The marinade
Whisk the olive oil, lemon juice and zest, red wine vinegar, garlic, oregano, paprika, salt and pepper together in a large bowl. Add the chicken and turn it in the marinade until every piece is coated. Cover and refrigerate for at least 2 hours, or up to overnight.
The chicken
Take the chicken out of the fridge about 15-20 minutes before cooking so it isn’t going in cold. Preheat the air fryer to 400°F (204°C).
Lightly grease the basket and lay the chicken out in a single layer with a little space around each piece. Crowding the basket steams the chicken instead of browning it, so cook in batches if your air fryer is small. Air fry for 12-14 minutes, shaking the basket or flipping the pieces once at the halfway point, until golden with lightly charred edges.
Check for doneness with an instant-read thermometer rather than going by time alone. The center of the thickest piece should read 165°F (74°C); for thighs, pulling it a little further to 170°F (77°C) gives an even more tender result. Give it another couple of minutes if it isn’t there yet.
To serve
Rest the chicken for 5 minutes so the juices settle back into the meat, then pile it into warm pita with tzatziki, or spoon it over a grain bowl. Add a Greek salad, feta, olives, red onion and tomato alongside.
Notes
Thighs are the more forgiving cut for this method - they stay juicy under the air fryer’s dry heat, where breast can go dry fast. Breast works if it’s what you have: cut it the same size but marinate no longer than 2 hours, since the lemon juice starts to make it chewy beyond that.
Cube size changes the timing: pieces cut closer to 1 inch finish nearer 10 minutes, while whole thighs need closer to 12-14.
If you want a sauce for drizzling, set aside a spoonful of the marinade before it touches the raw chicken. Don’t reuse marinade that raw chicken has sat in.
Leftovers keep well and reheat in 2-3 minutes at 350°F (177°C) - good in wraps and grain bowls.
