Air Fryer Green Beans
Green beans in the air fryer are a fast, low-effort side: a light coat of oil, salt, and pepper, then a single layer in the basket until the beans are tender-crisp with browned, blistered spots. No boiling, no separate blanching step, no pot to scrub afterward.
The whole method rests on two things. First, the beans have to be patted properly dry after rinsing — any surface water turns to steam in the basket and the beans end up boiled instead of roasted. Second, they need room: a single layer with a bit of space around each bean, working in batches if the basket is small. Crowd the basket and they steam each other soft instead of browning.
Garlic and Parmesan are the two most common finishes, and both are easy to add without complicating the method — garlic goes in raw with the oil before cooking, Parmesan goes on after, while the beans are still hot enough to melt it slightly. A squeeze of lemon at the end brightens the whole thing up. All of it is optional; the beans hold their own on salt, pepper, and a good char.
This is a weeknight side more than a special-occasion one — quick enough to make while something else finishes cooking, and sturdy enough to sit next to roast chicken, steak, salmon, or a pasta bake without any fuss.

- 454 g fresh green beans, ends trimmed, halved if long
- 1 tbsp extra-virgin olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper, freshly ground
- 2 garlic cloves, minced (or 1/2 tsp garlic powder) (optional)

Directions
Rinse the green beans, then pat them very dry with a kitchen towel — this is the step that decides whether they crisp or steam. Trim the ends and halve any beans that are noticeably longer than the rest, so everything cooks at roughly the same rate.
Tip the beans into a large bowl and toss with the olive oil, salt, pepper, and garlic if using, until every bean is lightly coated.
Spread the beans in a single layer in the air-fryer basket. If they don’t fit without overlapping, cook them in two batches rather than crowding the basket — crowded beans steam instead of browning.
Air-fry at 375°F (190°C) for 8–10 minutes, shaking the basket halfway through. The beans are done when they’re tender-crisp with browned, blistered spots here and there. Pull them at the shorter end of the time for more bite, or let them go the full 10 minutes for more char and a softer texture.
Tip the beans out, finish with grated Parmesan and a squeeze of lemon if using, and serve right away — they lose their crispness quickly once they sit.
Notes
For more caramelization, raise the temperature to 400°F (204°C) and start checking at the 9-minute mark.
Frozen green beans can go straight into the basket with no thawing — add 2–3 minutes to the cook time and expect a slightly softer result. Tossing them with a little melted butter instead of oil, done quickly before it hardens, helps the seasoning stick.
For a crumb topping, mix about 2 1/2 tbsp grated Parmesan or Pecorino with 1 1/2 tbsp seasoned breadcrumbs, 1 tsp oil, minced garlic, paprika, and parsley. Scatter it over the cooked beans and air-fry for 2 more minutes until golden.
Leftovers keep in the fridge for up to 4 days. Reheat in the air fryer at 350°F (177°C) for about 5 minutes.
