Air Fryer Grilled Cheese
A grilled cheese made in the air fryer instead of a skillet: two slices of bread, cheese in the middle, butter on the outside, cooked hot and hands-off until the bread is golden and the cheese has melted through. It’s the same sandwich most people already know, just built around a different heat source.
The main hazard of doing this in an air fryer rather than a pan is the fan: it’s strong enough to lift the light top slice of bread clean off the sandwich before the melting cheese can hold it down. A toothpick through each of two opposite corners solves that, pinning the top slice in place until it’s anchored. Cheddar is the base cheese, on its own or blended with a second, meltier cheese like gruyère, gouda, fontina or Monterey Jack, and butter goes on both outer faces, edge to edge, for even browning.
What comes out is a crisp, deeply golden crust with cheese that’s fully melted rather than just softened, since the air fryer’s circulating heat browns the outside evenly on all sides, not only where it touches a pan.
It’s a fast lunch or a late-night sandwich, no skillet or flipping spatula required, and good alongside tomato soup the way grilled cheese usually is.

- 2 slices bread (sourdough, white sandwich, or thick artisan)
- 55 g cheese, freshly grated or sliced (sharp cheddar alone, or 30 g cheddar + 25 g of a melty cheese, such as gruyère, gouda, fontina, or Monterey Jack)
- 2 tsp (10 g) butter, softened, for the outer faces (or mayonnaise, or oil spray)
- 2 toothpicks, to secure the top slice
Directions
Preheat the air fryer to 360°F (182°C). While it heats, grate or slice the cheese if it isn’t already, and butter one side of each bread slice, spreading right out to the edges so the crust browns evenly.
Assemble the sandwich with the buttered sides facing outward: bottom slice buttered-side down, cheese piled in the middle, second slice on top buttered-side up.
Push a toothpick through each of two opposite corners of the sandwich. This holds the top slice in place — without it, the air fryer’s fan can lift the light top slice off the sandwich before the cheese has melted enough to anchor it.
Set the sandwich in the basket in a single layer and air-fry at 360°F (182°C) for about 6 minutes, flipping it halfway through. Depending on the air fryer, it can take anywhere from 5 to 8 minutes — go by color and melt rather than the clock, and pull it once both sides are golden and the cheese has fully melted.
Remove the toothpicks, let the sandwich rest for a minute so the cheese sets slightly, then cut it in half and serve hot.
Notes
- Go by sight, not the timer. Air fryers vary a lot; pull the sandwich once it’s golden and the cheese is visibly melted rather than at an exact minute mark.
- Skip the flip if you like. Some air fryers toast both sides evenly enough without flipping — flipping halfway is just the safer default for even color.
- For a faster, deeper crust, run the air fryer at 400°F (204°C) for about 3 to 5 minutes per side instead, watching it closely since it browns fast.
- Keep the cheese in check. Overloading the sandwich means melted cheese overflows and can scorch on the basket. A sheet of parchment or a small trivet under the sandwich catches drips and makes cleanup easier.
- Mayonnaise browns evenly and adds a slight tang if you’d rather use it instead of butter on the outer faces; oil spray also works.
