Air Fryer Mozzarella Sticks
Mozzarella sticks are a diner and bar snack, not a heritage recipe, and that is fine — the whole point is a shatter-crisp crust wrapped around cheese that has gone stretchy and molten. Low-moisture mozzarella string cheese is the right base for this; fresh mozzarella carries too much water and bursts through the coating instead of oozing gently at the ends.
The sticks get a double breading — flour, then egg, then breadcrumbs, with a second pass through the egg and crumbs — which builds a thicker crust that holds together better in the air fryer than a single pass does. A mix of panko and Italian-seasoned dried breadcrumbs gives crunch plus some background flavor, though plain panko on its own works fine too.
The one non-negotiable step is freezing the breaded sticks solid before they go anywhere near heat. Freezing lets the crust firm up and start browning before the cheese underneath has time to melt through it. Skip this step and the result is bare, leaking cheese and a soggy patch where crisp coating should be.
Deep-frying is the original restaurant method — a minute in hot oil is all it takes — but the air fryer gets a very similar result with a fraction of the oil and mess, which is why it has become the default way to make these at home. Pull the sticks the moment cheese starts to bubble through the crust; a few extra seconds is the difference between molten and burst.
Serve hot, with warmed marinara for dipping. Ranch is a common alternative alongside if you want something cooler and creamier.

The cheese
- 12 low-moisture, part-skim mozzarella string cheese sticks (~28 g each), halved crosswise into 24 pieces
The breading
- 63 g flour
- 2 large eggs
- 30 ml milk (or water)
- 60 g panko breadcrumbs
- 54 g Italian-seasoned dried breadcrumbs (or an extra 54 g panko)
- 2 tsp Italian seasoning
- 1 tsp garlic powder
- ½ tsp onion powder (optional)
- ½ tsp salt
- ¼ tsp black pepper
- cooking spray, non-aerosol, for the basket and sticks
To serve
- marinara sauce, warmed, for dipping
Directions
The breading
Set up three shallow bowls for breading. In the first, mix the flour with the salt and pepper. In the second, whisk the eggs with the milk. In the third, stir together the panko, Italian-seasoned breadcrumbs, Italian seasoning, garlic powder, and onion powder.
Working with a few pieces at a time, dredge each piece of cheese in the flour, shaking off the excess, then dip it in the egg and coat it in the crumb mixture. Dip and coat a second time — back through the egg, then the crumbs again — so the whole surface is covered with no bare patches. Any gap in the coating is where the cheese will escape during cooking.
Lay the breaded sticks in a single layer on a parchment-lined baking sheet and freeze until solid, at least 1 hour and up to 2. This step matters more than anything else in the recipe: it lets the crust set and start browning before the cheese inside has a chance to melt through it.
To cook
Preheat the air fryer to 390°F (200°C) and lightly grease the basket with cooking spray. Arrange the frozen sticks in a single layer, not touching, and spray the tops lightly with oil.
Air-fry for 6 to 8 minutes, checking from about the 4- or 5-minute mark, until the coating is golden. Pull the sticks the moment cheese starts to bubble through the crust — do not wait for more color once that happens, or they will burst.
To serve
Let the sticks rest for about 3 minutes, then serve hot with warmed marinara sauce.
Notes
Cheese matters here: use low-moisture, part-skim mozzarella, either string cheese or a block cut into sticks. Fresh mozzarella holds too much water and will leak through the coating.
For a single breading instead of double, skip the second pass through the egg and crumbs. It is lighter and faster, though the crust will not hold up quite as well in the air fryer.
Breaded, uncooked sticks freeze well for 3 to 6 months. Cook them straight from the freezer, adding a minute or two to the air-fry time.
To deep-fry instead: fry the frozen sticks in 350°F (175°C) oil for about 1 minute per batch, until golden.
To bake in a regular oven: 400–415°F (200–210°C) for 10 to 15 minutes, sticks spaced about an inch apart on a greased sheet.
