Finnish Shortbread Cookies

Finskbrød are classic Danish shortbread cookies — crisp, buttery, and simple. Three ingredients: butter, flour, and sugar. A staple of the Danish Christmas cookie tradition.
Ingredients
Makes 125 cookies
- 250 g butter
- 375 g flour
- 85 g sugar
Topping
- 1 egg
- 20 g pearl sugar
- 30 g hazelnuts, chopped
Directions
Make the dough
Crumble the cold butter into the flour. Add the sugar and quickly bring it together into a smooth dough. Chill the dough for at least 30 minutes.
Shape and bake
Preheat the oven to 390°F (200°C). Roll the dough into thin logs and cut them into pieces about 2 inches (5 cm) long. Place them on a baking sheet with a little space between each.
Brush with the egg white and sprinkle with the pearl sugar and hazelnuts.
Bake on the top rack for 10–12 minutes, until lightly golden.
Serving
Let the cookies cool on the tray before transferring them to a tin.
Notes
- Makes about 125 cookies.
- The dough can be pressed through a meat grinder with a cookie plate for the classic ridged shape.
- Keep the dough cold while shaping — warm butter produces soft, flat cookies.
- Store in an airtight tin for up to 2 weeks.
