Smørrebrød with Cottage Cheese, Cucumber and Dill

Cottage cheese is light and mild and works well as a base on rye bread. Fresh cucumber and plenty of dill are what give it flavour. It is a simple smørrebrød that does not try to be more than it is — and that is fine.

Ingredients
Yields 4 servings
To serve
- 4 slices rye bread
- butter, for the bread
- 250 g cottage cheese
- ½ cucumber, thinly sliced
- 1 bunch fresh dill
- 1 spring onion, finely chopped
- salt
- white pepper
- lemon juice, to taste
Directions
Directions
Spread the rye bread with butter. Distribute the cottage cheese evenly over the slices. Lay the cucumber slices on top in a layer. Scatter the spring onion and plenty of fresh dill over. Season with salt and white pepper and add lemon juice to taste.
