Smørrebrød with Pea Mousse and Mint

Fresh or thawed peas blended into a smooth mousse with mint and lemon juice. Crumbled feta on top gives salt and acidity. A light and fresh vegetarian smørrebrød that works well in spring and summer.

Ingredients
Yields 4 servings
Pea mousse
- 300 g frozen peas, thawed
- 2 tbsp olive oil
- 2 tbsp freshly chopped mint
- 1 tsp lemon juice
- 1 clove garlic
- salt
- pepper
Assembly
- 4 slices rye bread
- 100 g feta cheese
- 1 tbsp olive oil
- butter, for the bread
Directions
Pea mousse
Blend peas, oil, mint, lemon juice and garlic into a reasonably smooth mousse. It doesn’t need to be perfectly smooth — a little texture is fine. Season with salt and pepper. Add a little more lemon juice if it needs acidity.
Assembly
Butter the bread and spread the pea mousse generously. Crumble feta over the top and drizzle with a little olive oil. Garnish with a few fresh mint leaves.
