Air Fryer Asparagus
Air Fryer Asparagus
Air fryer asparagus is asparagus spears trimmed of their woody ends, tossed with olive oil, salt and pepper, and cooked in a hot air fryer until tender-crisp with lightly browned tips. It takes about ten minutes and works as a quick side dish alongside almost any main course.
The main trick is not crowding the basket. Spears need to sit in a single layer so hot air can move around them; stack them and they steam instead of crisping, coming out pale and limp rather than bright green with browned tips. A full pound of asparagus usually needs two batches. Shake or flip the basket once, about halfway through, so both sides brown evenly.
Snap the woody base off each spear by hand rather than cutting it — bend the stalk a few inches up from the bottom and it breaks naturally at the point where the tender part meets the tough part. Thicker spears hold up best to the dry heat of an air fryer; thin ones can go limp or scorch before the tips brown.
Plain, the asparagus is just oil, salt and pepper, but it takes well to a squeeze of lemon juice, a scattering of grated Parmesan, minced garlic tossed in before cooking, or a pinch of red pepper flakes. A more assertive route is to marinate the spears in a red wine vinegar and Dijon vinaigrette before air frying, which turns the same side dish into something sharper and more dressed.
Ingredients
Serves 4
- 450 g fresh green asparagus (about 1 bunch), thicker spears preferred, woody ends trimmed
- 1 tbsp extra-virgin olive oil
- ¼–½ tsp kosher salt, to taste
- ⅛ tsp black pepper, freshly ground, to taste
- 1–2 garlic cloves, minced (optional)
- a squeeze of lemon juice (optional)
- grated parmesan (optional)
- a pinch of red pepper flakes (optional)
Directions
Snap the woody base off each asparagus spear by hand: bend it a few inches up from the bottom and it breaks naturally at the point where the tough end meets the tender part. A knife works too if you’d rather cut it evenly. Rinse the spears and pat them dry.
Put the asparagus in a bowl with the olive oil, salt and pepper — and the garlic, if using — and toss until every spear is coated.
Spread the spears out in the air fryer basket in a single layer with space between them. Don’t crowd the basket: stacked spears steam instead of crisping. A full pound usually needs two rounds.
Air fry at 400°F (204°C) for 6–10 minutes, shaking or tossing the basket once around the halfway point. Thin spears are usually done closer to 4–6 minutes, thicker ones nearer 8–10; look for bright green color, a tender-crisp bite, and lightly browned tips.
Finish as you like with a squeeze of lemon juice, a scattering of grated parmesan, or a pinch of red pepper flakes, and serve right away while hot.
Notes
Pick spears that are close to the same thickness so the whole batch finishes cooking together.
Preheating the air fryer isn’t necessary, though it doesn’t hurt — it can shave off a minute or so of cooking time.
For a sharper, more dressed version, whisk together 2 tbsp red wine vinegar, 2 tbsp olive oil, 1 tbsp Dijon mustard, 2 tbsp chopped parsley, 2 minced garlic cloves, and salt and pepper. Toss the asparagus in the vinaigrette and let it sit for 10 minutes up to 2 hours, then air fry at 400°F (204°C) for 5 minutes, shake, and cook for another 3–5 minutes.
No air fryer? Roast the asparagus on a sheet pan at 400°F (204°C) for 10–15 minutes instead.
Leftovers keep in the fridge for 3–5 days in an airtight container. Reheat in the air fryer at around 350°F (177°C) for a few minutes, or briefly in the microwave.
