Air Fryer Brownies
These are fudgy, from-scratch brownies baked in an air fryer instead of an oven. The batter is the same one you’d use for a classic American fudge brownie: cocoa, sugar, flour, butter (or a mix of butter and oil), and eggs, poured into a small pan that fits the basket.
An air fryer’s fan runs hotter and more directly than an oven, so the top browns fast while the center is still catching up. The trick is to run it cooler than a normal 350°F oven bake and pull the brownies while the middle is still soft — a toothpick should come out with moist crumbs, not clean and not wet batter. A short rest with the air fryer switched off lets carryover heat finish the center without drying out the edges.
There’s no tradition behind this one — it’s simply the fudge brownie adapted to a small appliance, useful when you want a single small pan of brownies without heating a full oven. Chocolate chips or walnuts are a common stir-in, and a little instant coffee deepens the chocolate flavor without making the brownies taste of coffee.
Ingredients
Serves 4-6
- 62 g all-purpose flour
- 30 g unsweetened cocoa powder
- 150 g granulated sugar
- ¼ tsp baking powder
- ¼ tsp fine salt
- 1-2 tsp instant coffee granules, optional, for depth
- 57 g unsalted butter, melted and slightly cooled
- 14 g neutral oil (vegetable or light rapeseed)
- 2 large eggs, at room temperature
- ½ tsp vanilla extract
- 45 g semi-sweet chocolate chips (or chopped walnuts), optional add-in
Directions
Grease or line a 6-7 inch pan, round or square, with parchment, choosing one that fits inside your air fryer basket. Preheat the air fryer to 330°F (165°C) for about 5 minutes.
Whisk the flour, cocoa powder, sugar, baking powder, salt, and instant coffee (if using) together in a bowl until no streaks of cocoa remain.
Add the melted butter, oil, eggs, and vanilla extract. Stir until the batter is thick and smooth, then fold in the chocolate chips or walnuts if using.
Scrape the batter into the prepared pan and smooth the top with a spatula.
Air fry at 330°F (165°C) for 15 minutes. Check the top partway through — if it’s browning faster than the center is setting, tent it loosely with foil. The brownies are ready when the edges are set but the middle still gives, and a toothpick inserted in the center comes out with moist crumbs rather than wet batter or a completely clean streak.
Turn the air fryer off and leave the brownies inside, or move the pan to the counter, and let them rest for 10 minutes. This carryover time finishes cooking the fudgy center without drying it out.
Let the brownies cool in the pan until you can handle it safely, then lift them out and cut into squares.
Notes
Running the air fryer lower and slower — 320-330°F (160-165°C) — is deliberate: the concentrated fan heat will over-brown the top before the middle is done. If your air fryer’s lowest setting is 350°F, tent the top with foil for the first two-thirds of the bake.
Timing depends on your machine and pan: metal pans cook faster than glass, and wattage varies between models. Check at the earliest suggested time and add 3-5 minutes at a time from there.
For an extra-fudgy version, melt 85 g (¾ cup) semi-sweet chocolate into the butter and cut the flour back to 31 g (¼ cup); fold the batter gently so you don’t overmix it.
A box-mix version works too: mix an 18.3 oz box with the eggs, oil, and water called for on the package, spread it in a lined 6-7 inch pan, and air fry at 300-330°F (150-165°C). A shallow pan takes about 18-20 minutes; a deep 7.5-inch springform pan needs 33-35 minutes. Look for the same moist-crumb toothpick test.
Coconut oil can replace the neutral oil, and all-purpose, whole-wheat, or gluten-free flour all work in place of each other. Avoid almond or coconut flour — they behave too differently in this batter.
