Air Fryer Chicken Parmesan
Thin chicken cutlets, breaded and air-fried until crisp, then topped with marinara and melted mozzarella. It’s the same idea as a classic pan-fried or baked chicken parmesan, but the air fryer replaces most of the oil with hot circulating air, so the crust still browns without a shallow-fry.
Chicken parmesan itself is an Italian-American dish, not something you’d find in Italy. It grew out of melanzane alla parmigiana — eggplant baked with tomato sauce and cheese — which Italian immigrants in the United States reworked into a breaded meat cutlet version sometime in the 20th century.
Pounding the chicken thin is what makes this work in an air fryer: a thin cutlet cooks through quickly and evenly, so the crust has time to crisp before the meat dries out. The breading goes on before the sauce and cheese, and both are added only after the crust has already browned — piling wet toppings onto raw breading is the surest way to end up with a soggy crust instead of a crisp one.
The result is lighter than a deep-fried chicken parmesan but keeps the contrast that makes the dish work: a crisp, savory crust, tender chicken underneath, and a melted, tangy topping. It’s a fast weeknight dinner — serve it with pasta, a simple green salad, or just bread to mop up the sauce.

The chicken
- 2 large boneless, skinless chicken breasts (450–570 g total), sliced lengthwise into 4 cutlets and pounded to 6 mm thick
- ¾ tsp salt
- ½ tsp ground black pepper
- 2 large eggs
- 60 g panko breadcrumbs
- 40 g grated parmesan cheese, for the breading
- 2 tsp dried Italian seasoning
- Olive oil spray (or cooking spray)
The topping
- 180 ml marinara or tomato pasta sauce
- 57–113 g shredded mozzarella (or 113 g fresh mozzarella, sliced)
- 2 tbsp grated parmesan cheese, for topping
- Fresh basil, thinly sliced, to serve (optional)
Directions
The chicken
Slice each chicken breast lengthwise into 2 even cutlets. Place them between sheets of plastic wrap and pound to an even 6 mm (¼ inch) thickness. Pat the cutlets dry and season both sides with the salt and pepper.
Set up two shallow dishes: beat the eggs in one, and in the other combine the panko, the parmesan for the breading, and the Italian seasoning.
Dip each cutlet in the egg, letting the excess drip off, then press it into the panko mixture, turning to coat both sides and the edges. Set the breaded cutlets on a rack or plate.
Heat the air fryer to 375°F (190°C). Mist both sides of the breaded cutlets with oil spray. Arrange them in a single layer in the basket — cook in batches if they don’t all fit without touching — and air-fry for 6 to 7 minutes, until golden on the underside.
Flip the cutlets and air-fry for 2 minutes more, so both sides are crisp and browned.
The topping
Spoon about 3 tablespoons of marinara over each cutlet, then divide the mozzarella on top and sprinkle with the remaining 2 tablespoons of parmesan.
Air-fry for a final 3 minutes, until the cheese is melted and lightly browned and the chicken reaches 165°F (74°C) at the center.
To serve
Scatter the basil over the top and serve right away. If cooking in batches, hold the finished cutlets in a low oven, around 200–225°F (93–107°C), while the rest cook.
Notes
- Crispier crust: melt the mozzarella onto the cutlet on its own first, then spoon the warmed marinara over the top after it comes out of the air fryer. This keeps the crust from steaming under the sauce.
- Egg-free: skip the egg and instead brush each cutlet with about 1 tablespoon of melted butter or olive oil before pressing it into the panko mixture.
- Thicker crust: add a flour dredge before the egg (flour, then egg, then panko), and toast the panko lightly with a little oil first for extra crunch.
- Don’t crowd the basket — the cutlets need space around them to crisp instead of steam.
