Air Fryer Maple Pecan Bars
Air fryer maple pecan bars sit in the pecan pie bar family, but they are built for the air fryer rather than adapted awkwardly from an oven recipe. A buttery shortbread crust goes in first and par-bakes on its own, then a stovetop maple-pecan filling gets poured over the top and the whole pan finishes in the basket.
The filling is deliberately eggless — no egg custard, no corn syrup. It is just butter, brown sugar, pure maple syrup, and milk, simmered until smooth, then folded through with finely chopped pecans off the heat. As the bars cool, that mixture sets into something closer to a soft praline or caramel than a classic pecan pie filling.
Air fryer temperatures for this run lower than a standard oven, since the basket’s forced air browns things fast — undershoot and check early rather than trust the clock. Flaked sea salt on top, added right out of the fryer, is the finishing touch that ties the sweetness together.
The pan needs to fit your basket — an 8x8-inch pan needs a fair-sized basket or oven-style air fryer; a smaller 6-inch or 2-quart dish is the fallback if yours runs small. Let the bars cool completely and then chill before cutting; rushed bars fall apart, while a properly set batch cuts into neat, clean squares.

The crust
- 156 g all-purpose flour
- 113 g unsalted butter, softened
- 53 g light brown sugar, packed
- ¼ tsp fine salt
The maple-pecan filling
- 57 g unsalted butter, diced
- 106 g light brown sugar, packed
- 80 g pure maple syrup
- 60 ml whole milk
- 1 tsp vanilla extract
- 165 g pecans, finely chopped
- ¼ tsp flaked sea salt, for topping
Directions
The crust
Line an 8x8-inch (20 cm) pan with parchment paper, leaving the paper hanging over two opposite sides so you can lift the bars out later, and grease the pan lightly. Beat the softened butter and brown sugar together until combined, then mix in the flour and salt until you have a crumbly dough with no big lumps. Press the dough evenly across the bottom of the pan.
Set the pan in the air fryer basket and cook at 320°F (160°C) for 15 minutes, until the crust is set and just pale gold.
The maple-pecan filling
While the crust bakes, combine the diced butter, brown sugar, maple syrup, and milk in a small saucepan. Bring to a gentle simmer over medium heat, stirring, and cook for 1–2 minutes until smooth. Take the pan off the heat and stir in the vanilla and the chopped pecans.
Pour the filling over the hot crust and spread it out evenly. Return the pan to the air fryer and cook at 320°F (160°C) for 15–18 minutes, until the edges are bubbling and the surface is firm with only a slight jiggle left in the center. If the pecans start browning too fast, tent the pan loosely with foil.
To finish
Sprinkle the flaked sea salt over the top as soon as the pan comes out. Let the bars cool completely on a wire rack, then chill for at least an hour — longer gives cleaner cuts. Lift the block out using the parchment overhang and cut into about 9 squares.
Notes
- Air fryer variance: check at the low end of each time; if the center is still wet after the finish bake, add 3–5 minutes.
- Oven fallback: bake the crust and the filled bars at 325°F (165°C), adding a few minutes to each stage.
- Clean cuts: chop the pecans small — it makes the set bars much easier to cut neatly.
- Storage: room temperature up to 3 days, fridge up to 1 week (firmer texture), or freeze up to 3 months.
