Air Fryer Meatball Subs
Air fryer meatball subs are meatballs, warm marinara, and melted cheese packed into a split roll — a sub-shop sandwich made at home, with the air fryer standing in for the oven or broiler most versions use. It is an Italian-American creation rather than a dish from Italy itself; the reference point is the classic Italian-American meatball, built from beef (often with pork or veal), breadcrumbs, egg, grated hard cheese, garlic, and parsley.
The meatballs go into the air fryer first, then get tossed in warmed marinara before they’re loaded into split rolls with cheese on top. The assembled sub goes back into the basket for one last, short blast — just long enough to melt the cheese without drying out or scorching the bread. That last step is the one to watch: leave it too long and the roll turns hard or burnt.
The meatballs come out browned and firm on the outside, tender inside, and glossy with sauce. The bread stays crisp where it’s been lightly toasted and soft where it’s soaked up a little sauce, without turning soggy as long as the timing is respected.
Serve the subs hot, straight out of the air fryer, with extra warm marinara on the side for dipping. They don’t hold well — the bread softens and the cheese sets as they sit, so this is a sandwich to eat right away rather than make ahead.
Ingredients

The meatballs
- 570 g ground beef (85/15) (or 450 g ground beef and 225 g ground pork, for a classic blend)
- 36 g Italian-seasoned breadcrumbs
- 25 g grated Parmesan or Pecorino Romano
- 1 large egg
- 45 ml whole milk
- 2 cloves garlic, minced (or ½ tsp garlic powder)
- 2 tbsp fresh parsley, finely chopped (or 1 tsp dried)
- 1 tsp Italian seasoning
- ¾ tsp salt
- ¼ tsp ground black pepper
- olive oil spray, for the basket
Assembly
- 4 sub or hoagie rolls (or small ~55 g Portuguese rolls, for portion control)
- 250–375 ml marinara sauce, warmed
- 4–8 slices provolone (or part-skim mozzarella), 1–2 per sub
- 14 g butter, softened, optional, for the cut sides
- fresh basil, optional, to garnish
Directions
The meatballs
Combine the ground beef with the breadcrumbs, grated Parmesan, egg, milk, garlic, parsley, Italian seasoning, salt, and pepper in a bowl. Mix with your hands just until it comes together — overworking the meat makes the meatballs dense. Wet your hands with cold water and shape the mixture into about 16 meatballs, roughly 1½ inches (4 cm) across.
Mist the air fryer basket with olive oil spray, or line it with parchment. Arrange the meatballs in a single layer with a little space between them, working in batches if they don’t all fit at once. Air-fry at 375°F (190°C) for 10–12 minutes, shaking or flipping the basket halfway through, until the meatballs are browned outside and reach an internal temperature of 165°F (74°C).
Assembly
While the meatballs cook, warm the marinara on the stovetop or in the microwave. Once the meatballs are done, toss them in the warm sauce until well coated.
Split the rolls and, if using, spread the cut sides with the softened butter — this gives the bread a barrier against the sauce. Toast the rolls in the air fryer for 1–2 minutes, just until lightly golden.
Load about 4 sauced meatballs into each roll, along with a little extra sauce, and top with 1–2 slices of provolone.
Return the assembled subs to the air fryer and cook at 375–400°F (190–200°C) for 1–2 minutes, just until the cheese melts. Keep this step short — the bread dries out or burns quickly once the sub goes back in.
To serve
Scatter fresh basil over the top if using, and serve the subs right away, with extra warm marinara on the side for dipping.
Notes
- Keeping the bread from going soggy or over-toasting: keep the final melt short (1–2 minutes), toast the rolls only lightly beforehand, butter or oil the cut sides as a barrier, use a thick marinara (or drain off excess), and sauce the meatballs separately rather than drenching the whole sandwich.
- Pre-cooked or frozen meatballs: skip the separate melt step — assemble the whole sub and air-fry at 350°F (175°C) for 3–5 minutes to melt the cheese and toast the bread at the same time. Frozen raw meatballs need 9–11 minutes, shaken halfway, before assembling.
- Two-temperature method: cook the meatballs at the lower end of the range, 350°F (175°C), then finish the assembled sub at a higher 400°F (200°C) for a fast 2-minute melt — the higher heat browns and melts quickly without drying out the roll.
- Make-ahead: shape the meatballs ahead of time and refrigerate, or freeze cooked meatballs for up to 3 months. Leftover subs keep wrapped in foil in the fridge for up to 4 days; reheat in the air fryer for 2–5 minutes.
- Leaner version: use 93% ground chicken or turkey in place of the beef, and swap the milk for low-sodium chicken broth.
