Air Fryer Meatloaf
A small, free-form meatloaf cooked straight in the air fryer basket instead of a loaf pan, so the fat drips away as it cooks. It’s built from ground beef (or a beef-and-pork blend), bound with egg and breadcrumbs, seasoned with onion, garlic and Worcestershire, then finished in the last few minutes with a ketchup-based glaze that caramelizes on top.
Cooking the loaf directly in the basket rather than a pan is what makes this an air-fryer recipe rather than just a smaller oven meatloaf — the hot air reaches it from all sides, so it cooks through in well under an hour without drying out, and the glaze goes on late so it sets into a sticky, dark coating instead of burning. The inside stays tender as long as the meat isn’t overworked when mixing.
Meatloaf itself is an American home-kitchen staple with no single fixed formula — every household has its own version of the beef, binder and glaze. This one keeps to the reliable core: ground meat, egg, breadcrumbs, a little Worcestershire for savoriness, and a ketchup-brown-sugar-vinegar glaze, adapted for the shorter, hotter cook an air fryer gives.
Slice it thick and serve it hot, the classic way, with mashed potatoes and a green vegetable alongside. Leftovers make a decent sandwich the next day, cold or reheated.
Ingredients

The meatloaf
- 450 g ground beef (80/20) (or 225 g ground beef + 225 g ground pork)
- 1 large egg
- 30 g panko (or 40 g dry breadcrumbs)
- 40 g yellow onion, finely chopped (or 1 tsp onion powder)
- 1 garlic clove (~5 g), minced (or 1 tsp garlic powder)
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp Italian seasoning (or a mix of dried basil, oregano and thyme)
- 1 tsp fine salt
- ½ tsp ground black pepper
The glaze
- 60 g ketchup
- 2 tbsp packed brown sugar
- 1 tbsp vinegar (red-wine, balsamic, or apple-cider)
- 1 tsp Dijon or yellow mustard (optional)
Directions
The meatloaf
In a large bowl, whisk together the egg, ketchup, Worcestershire sauce, Italian seasoning, salt and pepper. Stir in the chopped onion, garlic and panko (or breadcrumbs) until evenly combined.
Add the ground beef, or the beef-and-pork blend, and mix it in gently with your hands, just until everything is combined. Don’t overwork it — packing the mixture too tight makes for a dense, tough loaf.
Shape the mixture into a loaf about 6 x 4 inches and 2 inches thick, or divide it into two smaller loaves if you want a faster cook.
Heat the air fryer to 360°F (180°C). Set the loaf directly in the basket, lightly greased or lined with a foil sling for easier lifting later — no loaf pan needed. Cooking it straight in the basket lets the fat drip away as it cooks.
Air-fry for about 20 minutes (12 minutes for two smaller loaves), then check the internal temperature with an instant-read thermometer.
The glaze
While it cooks, stir the glaze ingredients together in a small bowl: ketchup, brown sugar, vinegar and mustard.
To finish
Once the loaf reaches about 150°F (65°C) in the centre, spread the glaze evenly over the top.
Return it to the air fryer and keep cooking until the internal temperature reaches 160°F (71°C) and the glaze has caramelized into a sticky coating — about 5 to 8 more minutes for a single loaf, or 2 to 3 minutes for smaller ones. Watch it near the end; the sugar in the glaze can catch and burn fast.
Let the meatloaf rest for 5 to 10 minutes before slicing it into pieces ¾ to 1 inch thick. This gives the juices time to settle back into the meat instead of running out onto the board.
Notes
- If using lean, all-beef mince, the pork blend keeps the loaf moister — or stir in an extra tablespoon of ketchup if sticking with beef alone.
- Quick oats work as a binder in place of the breadcrumbs or panko, about the same amount.
- Doubling the recipe (900 g / 2 lb meat) adds roughly 15 to 20 minutes to the total cook time at the same temperature.
- Every air fryer runs a little differently, and loaf thickness and meat fat content both affect timing — go by the thermometer, not the clock.
