Air Fryer Parmesan Shrimp
Large shrimp tossed in melted butter, garlic, lemon juice and grated Parmesan, then air-fried in a single layer until just cooked through. The cheese doesn’t form a real crust here — it clings to the shrimp as a savory coating and browns lightly in the heat, which is different from a breaded version with an actual crisp shell.
The method is short: toss the shrimp in the butter, garlic, lemon juice and seasoning first, then add the Parmesan and toss again so it sticks. Spread everything in a single layer in the basket and cook hot for well under ten minutes, flipping once halfway through. Shrimp go from done to rubbery fast, so pull them the moment they turn opaque and curl into a loose “C” — a tight “O” means they’ve gone too far.
Butter gives a richer result than olive oil, though either works, and freshly grated Parmesan matters more than the shelf-stable powdered kind, both for flavor and for how well it clings to the shrimp. Fresh parsley and a squeeze of lemon at the end round it out.
This is a modern American air-fryer recipe rather than a dish with any real history — there’s no traditional version to speak of, just what home cooks settled on once countertop air fryers became common. It works as a quick appetizer with a dip on the side, tossed through pasta or rice, or piled into a roll.

- 454 g large or jumbo shrimp (21–25 count), peeled and deveined, thawed if frozen and patted dry
- 28 g unsalted butter, melted (or olive oil)
- 25 g freshly grated Parmesan cheese
- 3 garlic cloves (about 15 g), minced
- 15 ml fresh lemon juice
- 1-2 tbsp fresh flat-leaf parsley, chopped
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika (optional)
- ¼ tsp red pepper flakes (optional)
- Lemon wedges, for serving
Directions
Pat the shrimp completely dry with paper towels and tip them into a large bowl. This matters more than it sounds like it should — wet shrimp won’t take the coating evenly.
Pour over the melted butter (or olive oil), then add the minced garlic, lemon juice, salt, pepper, and the paprika and red pepper flakes if using. Toss until every piece is coated.
Scatter the grated Parmesan over the shrimp and toss once more, working it in so the cheese clings to the shrimp rather than falling to the bottom of the bowl.
Spread the shrimp in a single layer in the air fryer basket, leaving space between the pieces so they don’t touch. If they don’t all fit without crowding, cook in two batches rather than stacking them.
Air-fry at 380°F (190°C) for 7-8 minutes, shaking the basket or flipping the shrimp once around the halfway point. They’re done as soon as they turn opaque and pink and curl into a loose “C” — watch them closely near the end, since a couple of extra minutes turns them rubbery.
Scatter the chopped parsley over the shrimp and serve immediately, with lemon wedges alongside.
Notes
- Crispy, breaded version: marinate the shrimp in the butter or oil, lemon, garlic and seasoning as above, then dip each piece in beaten egg and press it into a mix of breadcrumbs and Parmesan (roughly ⅓ cup breadcrumbs to ¼ cup Parmesan). Air-fry at 390°F (200°C) for about 4 minutes, flipping halfway, spraying both sides with oil. Skip the egg wash and the coating slides right off.
- Shrimp are done when they’ve turned opaque and curled into a loose “C” — a tight, curled-up “O” means they’ve overcooked. Smaller shrimp finish closer to 5-6 minutes, jumbo nearer 8, so go by how they look rather than the clock alone.
- Serve as-is with a cocktail or garlic-butter dip, over pasta or rice, tossed into a salad, or piled onto a bun.
- Reheat leftovers in the air fryer rather than the microwave to keep the texture from going soft.
