Air Fryer Pork Chops
Thick, bone-in pork chops get a quick dry rub of brown sugar, paprika, garlic and onion powder, then go straight into a hot air fryer. The dry heat browns the crust in minutes while the inside stays pale pink and juicy, with none of the oil-spitting mess of a skillet.
The rub does two jobs at once. Brown sugar helps the surface caramelize and pick up a little char, while paprika, garlic powder, onion powder and black pepper round out the savory side underneath it. A light coat of oil goes on first, mainly so the spices have something to stick to and actually brown instead of just sitting there dry.
Thickness is what separates a juicy chop from a dry one. A chop under 2.5 cm (1 in) cooks through before the crust has time to set, and ends up tough by the time it’s done. Center-cut, bone-in chops at least 4 cm (1½ in) thick give the crust time to build without overcooking the meat, and pulling the chops a couple of degrees below the target temperature keeps them from drying out further as they rest.
This is a fast weeknight dinner: rub, air-fry, rest, and it’s on the table in well under half an hour once the air fryer is hot. Serve it with roasted or mashed potatoes, a green salad, or steamed vegetables.
Ingredients

- 4 bone-in center-cut pork chops, about 4 cm thick, 250-300 g each (boneless, about 2.5 cm and 200 g, also works; reduce the cook time)
- 1½ tbsp olive oil
- 2 tbsp brown sugar, packed
- 1 tbsp paprika (sweet, or smoked for more depth)
- 1 tsp fine salt
- 1 tsp black pepper, freshly ground
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp ground mustard powder, optional
- 1 tsp dried thyme, optional
Directions
Pat the pork chops completely dry with paper towels, then set them aside while you preheat the air fryer and mix the rub — letting them lose some of their fridge chill helps them cook more evenly.
Stir the brown sugar, paprika, salt, black pepper, garlic powder and onion powder together in a small bowl, adding the ground mustard and dried thyme too if you’re using them.
Rub the chops all over with the olive oil, then press the spice mix onto both sides of each one, using it all up so none is left in the bowl.
Preheat the air fryer to 400°F (204°C) for about 5 minutes. Arrange the chops in a single layer in the basket with space between them so they don’t touch — cook in batches if they don’t all fit that way.
Air-fry at 400°F (204°C), flipping the chops once about halfway through. Boneless chops take roughly 10 to 12 minutes total; thick bone-in chops take about 14 to 16 minutes. Start checking the internal temperature near the end with a thermometer pushed into the thickest part, away from the bone, and pull the chops once it reads around 143°F (62°C) — a couple of degrees under the 145°F (63°C) target, since the temperature keeps climbing for a bit after they come out.
Let the chops rest for 5 minutes before serving so the juices settle back through the meat instead of running out onto the plate.
Notes
- Buy them thick. Chops under 2.5 cm (1 in) cook through before the crust has time to char, and dry out fast. Thick, bone-in, center-cut chops give the best result.
- Savory, sugar-free version: drop the brown sugar and add 2 tsp Italian seasoning, or a blend of dried sage, thyme, oregano and rosemary, keeping the salt, paprika, garlic powder and onion powder as they are.
- Gentler alternative: if the sugar in the rub is browning too fast, drop the temperature to 360°F (182°C) and cook a little longer — thick bone-in chops take about 14 to 16 minutes at this heat.
- From frozen: cook at 360°F (182°C) for about 18 to 20 minutes, still pulling the chops once they reach 145°F (63°C) internal.
- 145°F (63°C) is the safe finish temperature for pork and can leave the center faintly pink after resting — that’s not undercooked, just correctly rested pork.
