A classic Danish curry salad for open-faced sandwiches. Diced eggs, gherkins, and apple in a curried mayonnaise dressing – served as a topping on marinated herring smorrebrod.
Ingredients
- 200 ml mayonnaise
- 2 tbsp creme fraiche
- 3 hard-boiled eggs, diced small
- 5 sweet gherkins (cornichons), diced small
- 1 small tart apple, diced small
- 1 tbsp red onion, finely minced
- 1 tsp curry powder
- 1/2 tsp Dijon mustard
- 1/4 tsp salt
- 1/4 tsp black pepper
Directions
Dice the eggs, gherkins, and apple into small uniform pieces. Finely mince the red onion. Combine the mayonnaise and creme fraiche. Stir in the curry powder and mustard. Fold in the diced ingredients. Season. Refrigerate at least 2 hours. Serve as a topping on marinated herring smorrebrod.
Notes
Makes ca. 500 ml (6-8 smorrebrod).
