Air Fryer Fish Nuggets
Bite-size pieces of cod get a three-stage crust of flour, egg, and panko, then a spray of oil and a spin in the air fryer instead of a deep-fryer. The crust turns golden and crackling on the outside; the fish inside stays moist and flakes apart easily.
This is a homemade, lighter answer to the frozen fish stick: the same bready crunch and mild white fish, made from scratch and cooked with a fraction of the oil a deep-fryer needs. Panko, the coarse Japanese breadcrumb, is what gives the crust its open, crisp texture instead of a dense, greasy one.
It works as a fast weeknight dinner, since the fish itself needs only about ten minutes in the basket once it’s coated. Garlic powder and paprika season the crumb, and tartar sauce plus a squeeze of lemon round it out at the table.
Cod is the usual choice because it’s mild and firm enough to hold together in nugget-size pieces, though tilapia is an easy swap if that’s what’s on hand.
Ingredients

- 450 g skinless cod fillet (or tilapia), cut into bite-size nuggets
- 60 g all-purpose flour
- 2 large eggs
- 75 g panko breadcrumbs
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- olive oil spray (or avocado oil spray)
- tartar sauce, to serve
- lemon wedges, to serve
Directions
Pat the cod nuggets dry with paper towel — a dry surface lets the crust stick and crisp instead of turning soggy. Preheat the air fryer to 400°F (204°C).
Set up three shallow bowls: one with the flour, one with the beaten eggs, and one with the panko mixed with garlic powder, paprika, salt, and pepper.
Working one piece at a time, coat each nugget in flour and shake off the excess, dip it in the egg and let the extra drip away, then press it into the seasoned panko so crumbs stick on all sides.
Spray the air-fryer basket with oil and arrange the nuggets in a single layer, leaving space between each piece so they don’t touch. Spray the tops generously with more oil.
Air-fry at 400°F (204°C) for 10-12 minutes, flipping the nuggets halfway through and spraying the newly exposed side with oil. They’re done when the crust is golden and crisp and the fish reaches 145°F (63°C) inside, or flakes apart easily when tested with a fork.
Serve hot, with tartar sauce and lemon wedges on the side.
Notes
Cook in batches rather than crowding the basket — packed nuggets steam instead of crisping.
Don’t skip the oil spray; it’s what browns the panko crust.
For a grain-free version, skip the flour and panko and dip the fish straight from egg into almond flour, then air-fry at 425°F (218°C) for about 10 minutes without flipping.
For a crust without breadcrumbs, use a double-flour method instead: flour, then egg, then a second coat of flour, seasoned with Old Bay.
Cooked nuggets freeze well. Reheat from frozen in the air fryer at 350°F (177°C) for 3-4 minutes to re-crisp.
