French peas are a simple and very tasty side dish. Add a stock and reduce it down and they get even better. Rich in flavor and a perfect accompaniment — but also a dish in its own right. So to speak.
Ingredients — standard recipe

- 400 g peas
- 200 g bacon
- 50 g butter (only if using dried bacon or ham instead of bacon)
- 150 g onion (1 large or 2 small)
- glace (optional)
- 4 dl stock
