A tangy vinaigrette built on Dijon mustard and honey — good on salads, grain bowls, or as a marinade. Fast to make, keeps for weeks in the fridge.
Ingredients
Makes ca. 240 ml
- 4 tbsp Dijon mustard
- 3 tbsp honey
- 3 tbsp apple cider vinegar
- 4 tbsp extra-virgin olive oil (or neutral vegetable oil)
- 1/4 tsp fine salt
- black pepper, to taste
Directions
- Combine the Dijon mustard, honey, apple cider vinegar, salt, and pepper in a jar or small bowl.
- Whisk (or shake in a sealed jar) until the honey is fully dissolved and the mixture is smooth.
- Add the oil and whisk or shake again until emulsified.
- Taste and adjust: more honey for sweetness, more vinegar for tang, more salt as needed.
Notes
- Keeps in the refrigerator for up to 3 weeks. Shake before using - it will separate.
- For a more mustardy, less sweet dressing, reduce honey to 2 tbsp.
- A squeeze of lemon juice (1 tbsp) adds brightness.
- One small grated garlic clove (~3 g) is a good optional addition.
