A Russian mushroom sauce built on smetana (sour cream). Browned mushrooms, softened onion, and garlic folded into a sour cream sauce thickened with flour. Serve with boiled or mashed potatoes, buckwheat, or bread.
Ingredients
- 450 g fresh mushrooms (cremini, baby bella, or mixed wild), sliced
- 1 medium onion, finely diced
- 3 garlic cloves, finely chopped
- 1 tbsp butter
- 1 tbsp neutral oil
- 1 tbsp all-purpose flour
- 180 g sour cream (20% fat or higher)
- salt, to taste
- black pepper, freshly ground, to taste
- fresh dill, chopped, for serving
Directions
Heat butter and oil in a large skillet over medium-high heat. Add mushrooms in a single layer and cook without stirring for 3-4 minutes until browned. Stir and cook another 2-3 minutes until golden.
Reduce heat to medium-low. Add onion and garlic, stir, cover, and cook gently for 10 minutes until the onion is soft.
Sprinkle flour over the mixture and stir for 1 minute. Add sour cream and stir to combine. Heat gently for 2-3 minutes without boiling. Season with salt and pepper. Serve topped with fresh dill.
