The base smetannyi sous is a simple Russian mother sauce – sour cream thickened with a butter-flour roux. It works as a standalone sauce and as the foundation for mushroom and stroganoff variations.
Ingredients
- 500 g sour cream (20% fat or higher)
- 20 g butter
- 2 tbsp all-purpose flour
- salt, to taste
- white pepper, to taste
- 100-200 ml broth (or milk or water), optional
Directions
Melt butter in a small saucepan over medium heat. Add flour and stir constantly for 1-2 minutes until the roux turns light golden and smells nutty.
In a separate saucepan, heat sour cream over medium-low heat until hot but not boiling. Gradually whisk the hot sour cream into the roux, stirring constantly to prevent lumps. Simmer gently for 3-5 minutes until the sauce thickens and coats the back of a spoon.
Season with salt and white pepper. For a smooth result, strain through a fine-mesh sieve. Thin with broth, milk, or water if too thick.
