Sambal tempoyak mentah is the raw, uncooked version of the Malay fermented durian condiment. It takes just a few minutes to make: pound chillies and toasted shrimp paste together, stir in tempoyak, and serve. Spicy, sour, and funky, it goes with rice and fried fish. Make it fresh each time – it does not keep.
Ingredients
Makes ca. 250 ml
- 200 g tempoyak (fermented durian paste)
- 4-6 red bird’s eye chillies (cili padi), to taste
- 2 fresh red chillies (cili merah)
- 1 piece belacan (shrimp paste), ca. 8 g
- 1 pinch salt (optional)
- 1 squeeze lime juice (optional)
Directions

Wrap the belacan in foil and toast in a dry pan over medium heat for 1-2 minutes per side until fragrant and crumbly.

Pound the bird’s eye chillies and red chillies in a mortar and pestle to a coarse paste.

Add the toasted belacan and pound until combined.

Transfer to a bowl, add the tempoyak, and stir until evenly mixed. Taste and adjust with salt or lime juice if needed. Serve immediately.
Notes
- This raw version does not keep. Make it fresh each time.
