A simple cooked lingonberry sauce. Berries simmered with sugar and water until they burst and the sauce thickens naturally. Served with meatballs, porridge, pancakes, and game meats.
Ingredients
- 300 g lingonberries (fresh or frozen)
- 75 g granulated sugar
- 60 ml water
Directions
Combine lingonberries, sugar, and water in a saucepan over medium heat. Bring to a boil, then reduce to a simmer. Cook 10-15 minutes, stirring occasionally, until berries burst and the sauce thickens. Some whole berries should remain. Remove from heat and let cool – thickens further as it cools.
Notes
Makes ca. 350 ml.
Sugar is adjustable – more for porridge, less for game.
No thickener needed – lingonberries have natural pectin.
Keeps refrigerated for several weeks and freezes well.
