Pickled herring in a curried mayonnaise and sour cream sauce with apple and pickles. Served on dark rye bread.
Ingredients
- 4 pickled herring fillets, cut into 2 cm pieces
- 100 ml mayonnaise
- 100 ml sour cream (or creme fraiche)
- 1 small tart apple, peeled and finely diced
- 4 tbsp pickles (cornichons), finely chopped
- 2 tbsp red onion, finely chopped
- 2 tsp curry powder
Directions
Combine mayonnaise and sour cream. Stir in curry powder until evenly colored. Fold in apple, pickles, and onion. Add herring and mix gently. Refrigerate at least 24 hours. Serve on dark rye bread.
Notes
Makes 4 servings.
Use European-style curry powder (heavy on turmeric, mild heat). Indian curry blends will overpower the herring.
