Salsa de cacahuate is a peanut-chile salsa from southern Mexico (Oaxaca, Puebla, Guerrero). This is the simplest form: just peanuts, dried arbol chiles, garlic, and water.
Serve it with tacos, grilled meats, enchiladas, or tamales. It is a common table salsa in Oaxacan restaurants and market stalls.
Ingredients
- 150 g raw unsalted peanuts
- 10-15 dried chile de arbol, stemmed
- 2 garlic cloves, unpeeled (ca. 10 g)
- 1 tbsp vegetable oil
- 240-360 ml water
- 3/4 tsp kosher salt, to taste
Directions
- Heat oil in a skillet over medium heat. Add peanuts and garlic. Stir 2-3 minutes until golden.
- Add arbol chiles, stir 30-45 seconds until darkened. Remove from heat.
- Peel garlic. Transfer peanuts, garlic, and chiles to a blender. Add 240 ml water and salt. Blend smooth.
- Adjust consistency with more water. Keeps 5 days refrigerated.
Notes
- Start with 10 arbol chiles for moderate heat.
- Raw peanuts give better flavor than pre-roasted.
- A splash of vinegar (1 tsp) adds brightness.
- Makes ca. 350 ml.
