Molho de vilao (“villain’s sauce” or “peasant’s sauce”) is a Portuguese sauce for fish and meat. This is the warm Azorean version — a sauteed sauce with garlic, malagueta chili paste, white wine, and vinegar. Make it just before serving and pour it warm over fried fish.
Makes enough for 4 servings
Ingredients
- 150 ml olive oil
- 80 ml dry white wine
- 40 ml white wine vinegar
- 6 garlic cloves (ca. 30 g), thinly sliced
- 1 tbsp malagueta paste (or other hot chili paste)
- 1 tsp sweet paprika (colorau)
- 1/2 lemon, juiced (ca. 20 ml)
- fresh flat-leaf parsley, chopped, a generous handful
- salt, to taste
Directions
- Heat olive oil over medium heat. Add garlic, cook until just golden (about 2 minutes).
- Stir in malagueta paste and paprika. Cook 1 minute.
- Add wine, simmer 2 minutes.
- Add vinegar, lemon juice, and salt. Simmer 2-3 minutes.
- Remove from heat. Stir in parsley.
- Pour warm over fried fish. Serve immediately.
Notes
- This sauce should be made just before serving.
- Oil-to-acid ratio is roughly 2.5:1 to 3:1.
