Bolivian Llajwa

Llajwa is the simplest South American hot sauce – just tomato, hot peppers, and cilantro pulsed to a chunky consistency. No vinegar, oil, or citrus. Serve immediately and use within a day or two.
It is the standard table condiment in Bolivia, served alongside nearly every meal – grilled meats, soups, empanadas, and rice dishes.
Makes ca. 120 ml (4 servings)
Ingredients
- 1 large tomato (ca. 200 g), halved
- 1-2 fresh locoto peppers, or substitute: 2 jalapenos or 1 habanero
- 1 small handful fresh cilantro leaves (ca. 10 g)
- salt, to taste
Directions
- Remove jalapeno seeds if desired for less heat.
- Pulse tomato, peppers, and cilantro in a food processor to a chunky consistency. Do not puree smooth.
- Season with salt. Serve immediately. Best used within a day or two.
