Dominican Sazon
Dominican Sazon - kvalifood.com
Dominican sazon is a blended paste of peppers, herbs, and annatto. Annatto (achiote) is the defining ingredient, giving the paste its distinctive color. Freeze in ice cube trays for easy portioning.
Use it as a base for rice, beans, stews, soups, and braised meats. Add a cube or two at the start of cooking to build color and flavor.
Makes ca. 2 cups (8 portions)
Ingredients
- 2 cubanelle peppers (ca. 150 g), stemmed, seeded, chopped
- 2 bell peppers (ca. 300 g), stemmed, seeded, chopped
- 1 medium red onion (ca. 100 g), quartered
- 6 garlic cloves (ca. 30 g), peeled
- 30 g fresh cilantro, roughly chopped
- 15 g fresh culantro, roughly chopped (optional)
- 1 tbsp fresh oregano (or 1 tsp dried)
- 1 tsp annatto (achiote) powder
- 1 tbsp vinegar
- 1 lime, juiced (ca. 30 ml)
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Directions
- Place all ingredients in a food processor. Pulse to a thick, slightly chunky paste.
- Store in airtight containers or freeze in ice cube trays. Keeps 4 weeks refrigerated, 6 months frozen.
Notes
- Annatto is the defining ingredient. Red onion is traditional.
