Colombian Hogao
Colombian Hogao - kvalifood.com
Colombian hogao is a tomato-scallion sauce that works as both a cooking base and a condiment. Scallions (not regular onions) define it. Cook until the tomatoes break down and the oil separates slightly.
Spoon it over arepas, rice, grilled meats, empanadas, or eggs. It is also the standard cooking base for bandeja paisa and many Colombian stews.
Makes ca. 2 cups (4 servings)
Ingredients
- 360 g ripe tomatoes, diced
- 100 g scallions (green onions), finely chopped
- 3 tbsp vegetable oil
- 2 garlic cloves (ca. 10 g), minced
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
Directions
- Heat oil. Add scallions and garlic, cook 2 minutes.
- Add tomatoes and cumin. Cook 10 minutes, stirring occasionally, until tomatoes break down.
- Reduce heat. Season. Cook 10 minutes more until thickened and oil separates slightly.
