Colombian Salsa Rosada

Colombian salsa rosada is a simple mayo-ketchup sauce with lime juice. It uses a higher ratio of ketchup than the Argentine version, making it sweeter and more pink.
Serve it with french fries, patacones (fried plantains), hot dogs, burgers, or as a dip for empanadas and fried snacks.
Makes ca. 180 ml
Ingredients
- 120 g mayonnaise
- 60 g ketchup
- 1 tbsp fresh lime juice (15 ml)
- 1/4 tsp garlic powder (optional)
- salt, to taste
- freshly ground black pepper, to taste
Directions
- Mix mayonnaise and ketchup until uniform pink.
- Add lime juice and garlic powder if using. Season.
Notes
- Keeps 3-5 days refrigerated.
- More ketchup = sweeter, more pink, more Colombian.
- Serve with fries, yuca fries, empanadas, seafood, or burgers.
